Ruby Tuesday, Inc. is a leading company in the bar-and-grill category of the U.S. casual dining restaurant industry. From its original location in Knoxville, Tennessee, the Ruby Tuesday chain has grown to more than 700 units in about 40 states primarily in the Southeast, Northeast, Mid-Atlantic, and Midwest. Nearly 500 of the outlets are company owned with the remainder being franchised. Entrees, ranging in price from $6.49 to $16.99, include ribs, chicken, steak, seafood, pasta, burgers, and sandwiches, and the menu also features soups, a salad bar, and desserts. The restaurants also offer food for carry-out via the company's "curb-side to-go" initiative. Ruby Tuesday's relatively small but expanding international operations include about three dozen franchised restaurants in about a dozen countries.

Makes 2 sandwiches

2 round sandwich buns, cut crosswise
2 chicken breasts, pounded
2 cups buttermilk
4 tablespoons hot sauce
1 cup flour
1 tomato, sliced
lettuce leaves
blue cheese crumbles, optional
oil for frying

Prepare a pan for deep frying.

In a bowl, pour in the buttermilk. Then add in the pounded chicken breasts and let it soak for 2 to 3 minutes. Meanwhile, add the flour, 1 teaspoon of salt and pepper into a separate bowl and stir well.

Once the oil is ready, take the soaked chicken piece, shake of the excess milk and dip it into the flour mixture. Ensure that the meat is well coated.

Then carefully lower it into the hot oil and allow each side to fry for 4 to 5 minutes or until golden brown. When it is done, place it on a paper towel to absorb the excess oil. Repeat with the other piece of chicken. After the oil has been removed, place the chicken pieces in a plastic container. Pour the hot sauce over the pieces, making sure to evenly distribute the liquid.

Then, seal the container with the lid and lightly shake, to ensure that each piece of chicken is well-coated in hot sauce. Then, on a clean pan lightly toast each side of the buns.

Finally, take the bottom half of the bun and layer it with a couple of lettuce leaves, add 1 or 2 tomato slices on top of that and then the fried chicken patty. Sprinkle on some blue cheese on top of the chicken and close the sandwich with the final layer of bread.

Notes: You can buy cooked chicken tenders at your supermarket deli and toss them in hot sauce for a no cook method of making this Buffalo Chicken Sandwich.
